Tomato with goat cheese and fresh Tarragon saladIt's optional to prepare this salad on individual plates or in a large bowl that you can layer the ingredients in order as presented then toss when ready to serve. Putting the salad together and letting the flavors mellow together does improve the flavor.



  • 4 large garden tomatoes (if possible)
  • 4 oz. crumbled goat cheese, or any leftover goat cheese on hand
  • 3 tablespoons olive oil
  • ½ cup fresh tarragon, finely snipped
  • salt and pepper to taste
Cut tomatoes into small wedges, add to salad bowl. Crumble in cheese, drizzle with olive oil, salt, pepper and Fresh tarragon. Toss gently. Chill until ready to serve. Toss again before serving.
